Recipe Box: Holiday Cake Balls
I love making these simple and delicious cake balls for Christmas or any holiday celebration. They are as easy as they are tasty and you can find all the supplies you need to create them right here in Shipshewana.
Cake balls can be quite expensive to purchase, and for the price of just 2 or 3 you can make 2 dozen as quickly as you can bake and ice a regular birthday cake.
Ingredient List (And where to find them):
- 1 Boxed Cake Mix (And most of the grocery items below) - E & S Sales
- 3 Eggs
- 1 Cup Water
- Oil (Follow Amount on Cake Box as this can vary.)
- 1 Tub of Icing
- Flavored Extract (Optional) - E & S Sales has an entire aisle of options here... peppermint, chocolate and everything in between.
- 2-3 Cups of Dipping Melts (Chocolate, White Chocolate or Colored Chocolates)
- Optional Decorative Toppings - Candies at Aunt Millie's Candy and Nuts
Supply List:
- Large Mixing Bowl
- Medium Cookie Scoop - Yoder's Shipshewana Hardware
- 9 X 13 Cake Pan
- Food Processor (Optional)
- Measuring Cups
- Deep Glass Bowl (I use a small serving bowl taller than a cereal bowl but about the same diameter.)
- Waxed Paper
- Forks (For dipping the balls into chocolate.)
Directions:
- Prepare and bake any flavor boxed cake following the instructions on the box.
*Flavor Tip: I add a teaspoon of flavored extract to enhance the cake ball flavor to the raw mix before baking. (Example: Lemon when baking a lemon cake, etc.)
- Once cool, pulse cake into sand-like consistency (or you can just crumble finely by hand). Add 1/3 of the tub of icing and pulse until it is combined and can be rolled into balls.
- Use your cookie scoop to dip uniform dough balls, then roll into balls by hand.
- Place rolled balls onto waxed paper prior to dipping.
- Melt a full bowl of dipping melts (about 2 cups).
- Place 1 ball at a time into chocolate and cover, using fork, remove from chocolate and place back on waxed paper to set.
*Decorating Tip: This is when I add sprinkles, or any hand created decorations for the top before they fully set so they stick to the melted chocolate.
For my hot cocoa cake balls, I purchased rolos and used chocolate frosting to attach a mug handle (rolled tootsie rolls) and marshallows (tiny pieces of vanilla tootsie rolls) to create a miniature mug of hot cocoa.
